I’ve made sun tea for years during the summer and have never become sick myself or had friends or family become sick. Maybe it’s because we drank it right away. The problem with Sun Tea is that the water reaches 130 degrees (maybe) and it needs to hit 195 degrees for 3 to 5 minutes to kill any bacteria. Bacteria can lurk in the water or even the tea you use.

One alternative is Refrigerator Tea. Using filtered water, the tea of your choice, and other ingredients like sweeteners, you can “brew” ice tea in the refrigerator overnight.
